Grilled Chicken & Avocado Sandwich

Do the ladies that are vying for “the Bachelor’s” love, err like, watch previous seasons of this show?

Do they not see every eliminated contestant spewing tears & saying,

“You are making a mistake, {sniff}”

“I was the best match for him, {sniff}”

“She is not here for you! {sniff}”

“I am shocked, {wail}”

Doesn’t every woman out there vow to never say those words if she ever happens to find herself on “the Bachelor”?

Do they slip roofies in your drink and have you read a teleprompter?

I  have watched “the Bachelor” since Season 1 when Alex picked Amanda over Trista in the “most dramatic rose ceremony ever”.

During the reunion show when the couple says they are “just friends” and one of the runner-ups is announced as the new bachelor or bachelorette I look at my hubs and vow to never watch this show again- but low and behold here I am, wide eyed & watching Jake fall in like with Vienna.

If I am ever a contestant on the Bachelor (which is I’d say is the closest thing next to impossible because my hubs would probably not think it is a great idea) and I am eliminated I will just stand there and smile and not say a word. And then month’s later when I am home watching myself on tv, I will discover as hard as I tried to NOT embarrass myself, there will be a big, glob of food in my toothy smile.

I love a great sandwich. This is a great sandwich. Easy, satisfying, delicious!

Earlier in the day I start by marinating some boneless, skinless, chicken breasts with:

  • Soy Sauce
  • Lemon Juice
  • Liquid Smoke (the tiniest amount)
  • Canola Oil
  • Season Salt
  • Garlic Powder
  • Onion Powder

I braved the 45º temp outside in order to get the chicken good & grilled.

Gather all of the sandwich making ingredients.

  • Avocado
  • Sprouts (probably what is stuck in my teeth)
  • Sharp White Cheddar Cheese
  • Honey Mustard
  • Wheatberry Bread
  • Tomatoes (normally I would have these- but we are experiencing a severe tomato shortage in my house. My little one loves tomatoes and when he spots one– it is all over)

Honey Mustard… yum. No need to buy it pre-made! It is so easy to make.

part mayonnaise, part mustard, part honey

I add equal amounts of mayo & mustard and then add honey to taste. I like mine middle of the road sweet.

Mash the avocado with a fork.

Choosing avocados: Ripe ones should be heavy & give slightly when pressed but not be soft enough to leave a mark. You can store ripe avocados for  a few days in your fridge. Stay away from squishy avocados. If you are not using them that day- you can choose harder ones. They will ripen in 3 to 5 days on your counter. Quick Trick: Put them in a brown paper bag with an apple to ripen faster.

Layer on your cheese. Mine is extra sharp white cheddar. Yum.

I like to butterfly my chicken so it will lay flat on the sandwich.

A 1/2 breast, butterflied, is a perfect fit!

Pile on the sprouts & season with freshly ground black pepper & kosher salt.

Here I would normally add my mysteriously missing tomatoes. Perhaps some bacon– if you are feeling fiesty.

Great for couch eating while watching Jake choose the love of his life, err month.

Ingredients:

  • 4 skinless, boneless chicken breast halves
  • marinade, recipe below
  • 8 slices wheatberry bread
  • 1 avocado, mashed
  • honey mustard, to taste
  • extra sharp white cheddar cheese, slices
  • 1 bunch sprouts
  • 1 tomato, sliced
  • kosher salt & black pepper to taste

Marinade:

  • 2/3 cup canola oil
  • 2/3 cup soy sauce
  • 1/4 cup lemon juice
  • 2 teaspoons seasoning salt
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder

Instructions:

In large bowl, mix all ingredients of marinade together. Place chicken in bowl and cover with marinade. Marinate chicken breast halves, covered, in refrigerator for 2 t0 3 hours. (No more than 5 hours because of lemon juice in marinade.)

Preheat the grill on high heat. Discard marinade and grill chicken until juices run clear, about 8 minutes per side. Set aside.

Assemble sandwich by layering mashed avocado, honey mustard, cheese, reserved chicken, sprouts, tomato slices, salt & pepper.

    Well, haven’t made these sandwiches yet, but I do have the ingredients and they will be next on my list. I love avocados in most anything, even alone.

    And, oh, by the way, I’m ashamed to say, I’ve seen most of the Bachelors (and Bachelorettes). I remember Bachelor Bob, Charlie, who Trista dumped for Fireman Ryan. Oh, Charlie was soooooooooooooooooooooooooo handsome! Byron, the professional fisherman and Mary, who I just heard from my daughter (who is also a closet addict) have broken up. Jenn and Andrew Firestone, and the list goes on and on. Even John Paul Merritt from OKC is the son of a friend of mine from High School. I think I need to get a life, don’t you?

  • We must be soulmates – this is so close to my favorite sandwich ever from Charlestons! I have my version on my site. And doggone it, I have to unwillingly admit, I am currently sucked into the Jake Bachelor right now. Every week I say, I will NEVER watch another one of these again. Yet I do…

  • We are soulmates! I love Charleston’s! I forever curse the day they replaced the super-cheesy cheese bread with the honey croissants (even though I love the croissants- there’s room for both on the menu, right? Listen up Charleston’s! Bring back the cheesy bread! The salads are just not the same without it!)
