Cracker Breaded Pork Chops

Get ready…. here it is:

Sequined clothing is an unspoken requirement in Las Vegas.

Sequins on your pants…

Sequins on your hat…

My recent observations of tourists in Vegas is that- without hesitation- they pack their one sequined vest they’ve had since 1998 and wear that baby like it never went out of style…

I get it.

You need to sparkle in a city full of lights.

Like crackers on a pork chop, sequins makes vacationing better.

Breaded Pork Chops are nothing new… but when I was introduced to Cracker Breaded Pork Chops by a friend I saw sparks fly.

Crackers? Extra Crunchy? Salty?

I must make these!

Gather up:

  1. saltine crackers
  2. eggs
  3. onion powder
  4. garlic powder
  5. worcestershire sauce

Beat up your eggs with the onion & garlic powder. Add in your worcestershire sauce. Mix well.

Worcestershire sauce… besides being fun to say… is a magical little mixture of all kinds of good stuff. Malt vinegar, molasses, anchovies (salty), tamarind, onions, garlic, lemon, cloves, peppers. It is a flavor power house. I use it often.

Thin cut boneless pork chops are my preference here.

Why? Because pork must be cooked thoroughly to an internal temp of 160º. When you are using a breading- thin cut is they way to go so the breading does not burn.

Season your pork with salt & pepper.

Heat your canola or vegetable oil in a heavy bottomed skillet & start your breading.

Dip the pork into the egg wash first

Let the excess drip off

Place the pork into your cracker crumbs and press firmly. Press firmly enough so the crackers crush even more and get fully coated on the meat.

Pan fry the pork chops for a couple of minutes on each side– just until they are golden brown.

The goal is to not cook the pork here- just to brown the breading.

The browned pork now goes into a 375º oven for 40 minutes. Turning once half-way through.

Crispy! Delicious! Simple!

I serve them with my Mashed “No Potatoes”.

Mmmmm… Comfort food.

Ingredients:

  • 2 eggs
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 tablespoon worcestershire sauce
  • 1 large sleeve saltine crackers, crushed
  • 6 thin cut boneless pork chops
  • kosher salt, to taste
  • fresh ground black pepper, to taste
  • canola or vegetable oil, for frying

Instructions:

Preheat oven to 375º. Place crushed crackers in a plate for breading. In small bowl, whisk together eggs, onion powder, garlic powder, & worcestershire sauce. Heat oil in heavy bottomed skillet over medium-high heat.  Dip pork into egg mixture, drip off the excess, and then press into cracker crumbs, coating evenly on both sides. Fry in oil for 2 minutes per side until golden brown. Transfer browned pork to a baking sheet. Bake in preheated oven for 40 minutes, turning once halfway through. Internal temperature of pork must be 160º. Enjoy!
