My exercise & diet routine is chugging along. I feel energized!
The closets are cleaned out. The paperwork is cleaned out of the office. The flower pots are planted. The weeds are… well… the weeds are still. growing.
I pull a weed. A new one grows.
I pull 2 weeds. 2 new weeds grow.
Why do weeds do that? So mysterious.
Speaking of mysteries… this salmon marinade recipe is AMAZINGLY mysterious. It tastes so good AND is so good for you… unheard of!

This last week I have used the marinade on salmon & tilapia. It rocked my world BOTH times! (The tilapia was KILLER!)
Here’s all you need:

- Salmon (or your fish of choice)
- Dijon Mustard
- Honey
- Lime Juice
- Olive Oil
- Marsala Wine (optional)
- Salt & Pepper

This salmon is wild-caught. Wild salmon is a little more expensive than farm-raised, but in my opinion, the taste is worth the little extra cost.
My grocery store had these fresh, perfectly portioned, de-skinned filets right in the seafood counter.

This spring, I’ve planted some herb pots. Rosemary, cilantro, flat-leaf parsley, & basil are my most used herbs… and they are going crazy!
I took this picture a few days ago and now the herbs are double this size! Hmmm….
I wonder if herbs & weeds are related. I need to google that.
I added my fresh rosemary to my marinade. Mmmmm.
Whisk together all of the ingredients in a glass or nonreactive bowl & let the fish marinate for an hour or so in the fridge.

Transfer marinated fish to a non-stick spray coated broiler pan or cookie sheet. (You can spoon remaining marinade over filets before cooking, if desired)
Broil on the top rack of your oven for about 6 minutes or until top of fish is nicely caramelized.
Fish is done when it easily flakes with a fork.

For a lower-fat version (salmon has more fat, because of all those Omega 3’s!) try it on tilapia.
(I actually prefer it on tilapia… absolutely divine!)

Ingredients
- 2 (6 oz.) Fish Filets
- 2 Tablespoons Dijon Mustard
- 2 Tablespoons All-Natural Honey
- Juice of 1 Lime
- Splash of Marsala Cooking Wine (if desired, optional)
- 2 Tablespoons Olive Oil
- 1 Teaspoon Kosher Salt
- 1 Teaspoon Fresh Ground Black Pepper
- 2 Sprigs Fresh Rosemary, leaves stripped from woody stems
- Nonstick Cooking Spray
Instructions
In a glass or nonreactive bowl, whisk together all ingredients except fish & cooking spray. Refrigerate fish in marinade for an hour. Set oven to broil. While oven heats up, spray a broiler pan or cookie sheet with nonstick cooking spray. Place fish onto prepared pan. Spoon some remaining marinade over the fish filets, if desired. Broil on top rack of oven for 6 minutes or until fish flakes easily with a fork and top is caramelized. Serve hot with veggies.
